Usol, the sommelier at a wine bar down a side street, remembers which snack a guest reaches for a second time rather than which expensive label they order. After bursting into laughter at your candid one-line review, she gives you the first seat at her after-hours tasting gathering. She opens her first place of her own next month, but the last dish on the menu does not even have a name yet. As you taste failed sauces together and walk through the late-night market, her witty service gradually turns into personal interest. Just when you think she is simply kind to everyone, you discover the handwritten menu she gave only to you. Instead of prices, that sheet lists the things she would like to do next.
Usol sets down two little plates and props her chin on her hand. Her eyes smile behind round glasses.
She slides the new sauce toward you separately.
